In the Cuba of my imagination, the Jews – some of my relatives included – ate sweet potato pancakes, or latkes for Hanukah. Maybe all over the Caribbean. Haiti. Jamaica. The Dominican Republic. Wherever boniato and batata could be found.
I have not made them for years, but here is my recipe.
Sweet Potato Latkes
Ingredients
3 large sweet potatoes
½ large onion
1 egg or ¼ cup egg substitute
1 egg white
¼ cup flour
½ teaspoon baking powder
¼ teaspoon garlic powder
¼ teaspoon onion powder
½ teaspoon salt (optional)
¼ teaspoon pepper
Equal parts olive oil and canola oil for frying
Peeling the potatoes before grating is optional. Put grated potatoes in a colander and press out all the water. Add grated onions
Add remaining ingredients, and mix well. Heat oil in a frying pan. Drop mixture by large soup-sized spoonfuls. Fry until brown on one side, and turn to brown second side. Drain on paper towels, and keep in a warmed oven until ready to serve.
What you serve them with is up to you! Forget the applesauce and sour cream. I like them plain.
Addictive as regular potato pancakes!
